Recipe for Danish Koldskål
Summertime is Koldskål time!
But what exactly is Koldskål? The word itself literally translates to “cold bowl.”
It is a traditional Danish cold buttermilk soup, eaten as dessert or snack during warm summer months. You can't miss it in Danish supermarkets during the season, but for those of us who can't buy the finished product, there is a simple recipe.
Koldskål is really easy to make, since it only consists of a few ingredients. Depending on which recipe you are looking at, some ingredients may vary. I am going to present you the recipe I usually make during summer, since my first visit in Denmark.
Ingredients
500g Buttermilk
500g Skyr
2 Egg Yolks
50g Sugar (Koldskål itself is not too sweet since it is usually eaten with buiscuits called kammerjunkere. If you like it sweeter, use some more sugar)
1 Vanilla pod
20ml Lemon Juice
1/2 tsp Lemon Zest
What you need
A large mixing bowl
A hand mixer or a blender
Preparation
First separate the egg yolks.
Place the egg yolks, sugar and vanilla in a large mixing bowl and whisk until creamy.
Add the lemon zest, lemon juice, buttermilk and skyr and blend everything together thoroughly.
Caution: Do not mix for too long to keep the cool
Store your Koldskål in the refrigerator and use up as soon as possible.
While Koldskål itself is tasty and refreshing on its own, it is usually served with various additions, such as:
Kammerjunkere, basic butter biscuits (the traditional way)
Fresh berries or slices of banana and apples
Oats and Granola
As you can see, Danish koldskål is super easy to prepare and it makes the perfect cool, refreshing snack on a hot summer day.
